- 2 Dungeness crabs (FRESH, cleaned and cut into manageable pieces, my butcher did mine for me)
- 1 Tbsp. cornstarch
- 1 stalk lemongrass (trimmed and finely chopped)
- 3 cloves chopped garlic
- 1 shallot (small, finely chopped)
- 8 scallions (cut into 1 1/2 inch pieces)
- 2 Tbsp. water
- peanut oil
- 2 Tbsp. soybean paste (crab, in oil)
- 1/2 Tbsp. sesame oil
- 1 Tbsp. fish sauce (good, I like the three crabs brand)
- 1 Tbsp. oyster sauce (good, like Lee Kum Kee)
- 1 Tbsp. sugar
- 2 tsp. ginger (freshly grated)
