- 1 Tbsp. extra-virgin olive oil
- 1/2 onion (small, thinly sliced)
- 1 garlic clove (minced)
- 1 chicken breast
- 1 tsp. curry powder
- 2 Tbsp. lemongrass (finely chopped)
- 1 cup cooked quinoa
- 1 Tbsp. fish sauce
- 1 green onion
- 1/2 avocado (ripe)

Directions
- In a medium pan over medium-high heat, add the olive oil, onion, and garlic. Saute until the onions are translucent, 3 to 5 minutes.
- Add the chicken, curry powder and lemongrass. Saute until the chicken is browned and cooked through, about 5 minutes.
- Add the quinoa and fry up for 2 minutes.
- Remove from heat and stir in the fish sauce and green onion. Add avocado slices on top. Enjoy!
