  • 2 chicken thighs
  • 1/2 cup honey
  • 1 lemon
  • 3 fresh basil leaves
  • pepper
  • salt
  • chicken stock (optional)
  • 1 zucchini (optional)
  • 1 eggplant (optional)

    Directions

    1. Combine the honey, lemon juice and basil leaves and stir to make a marinade. Season to taste.
    2. Coat the chicken with the marinade and put in an air tight ziplock bag in bowl in the fridge. Let it marinate for at least 1 hour up to 6 hours.
    3. Cut your vegetables (if you have any) into large cubes and season them.
