- 3 Tbsp. peppercorns
- 4 Tbsp. thyme (dry)
- 4 Tbsp. anise seeds (or 4 whole star anise)
- 1 tsp. whole cloves
- 1 cup boiling water
- 6 liters water
- 1 whole lemon peel (Juice of)
- 4 cloves chopped garlic
- 1 chopped onion
- 3 sprigs fresh thyme (if you have them)
- 3/4 cup sugar (Here you can experiment with flavours by using equal amounts of other sugars like honey, maple, molasses or brown sugar.)
- 1/2 cup kosher salt
- 4 lb. chicken (A 3 to ,you can brine 2 chickens at once; see notes)
- 2 Tbsp. olive oil
- chopped fresh thyme (Season the skin with some ,dried can be substituted)
- 2 Tbsp. olive oil
- 1 whole lemon (small)
- 6 sprigs fresh thyme
- 4 cloves garlic (peeled)

Really interesting recipe - I wasn’t sure about the star anise but it really added a nice flavor to the chicken
