Disappointed by the lack of taste and texture of this flat cookie. Expected them to be crisp and with more lemon

I took the advice of one of the commenters, i used 1 egg, pinch of baking soda, and instead of adding lemon juice, i used 2 T lemon extract and 1 T vanilla. They turned out better on a stick free pan, not on a baking mat. I used about a teaspoon of batter for each, and watched after 3 minutes since its so little batter/dough that it can burn fast. Not quite the ones I remember, but very good.
