- 1/2 cup ricotta cheese (Whole Milk)
- 3 Tbsp. fresh lemon juice
- 1/2 tsp. lemon extract (optional, but amps up the lemon flavor)
- 2 Tbsp. sugar (for sprinkling)
- 2 Tbsp. fresh lemon juice
- 1 tsp. lemon zest
- 3/4 cup confectioners sugar

Love love love this recipe!! I have made it about 7 times and it turns out perfect each time. The trick is in making sure the butter is really cold and not handling the dough too much with your hands as that melts the butter. Also I let the dough sit in the fridge for about 5-10 minutes before rolling and cutting out to bake. The results were a fluffier soft batch of yummy scones 😀
