Fantastic ! I use applesauce and add the extra lemon extract. After the first time I made and realized how good it was I decided to always double the recipe! The only major change I made was in my choice of flour; I am gluten free but didn’t like almond flour in this cake. Instead I use a standard 1to1 gluten free flour blend.

Excellent, I doubled the recipe and used an 8” cake pan which came out perfectly. Very moist, not too sweet, subtle lemon flavor. Next time I’ll make sure to grate the apple smaller and remove clumps from ricotta before combining.

I’ve made this half a dozen times now and it’s become my favorite easy bake desert. Never baked with lemon before, I was surprised how light and refreshing it is. Caution, this recipe is a very small portion, which is one of the things I love about it. I use ramikens instead of a cake pan.

i used a 7 inch pan and for some reason the cake batter was really small, like it didnt fill up the pan much
but it tasted really good so bonus points for that
