- 1 3/4 cups gluten free all purpose flour (regular OR)
- 3/4 cup coconut sugar (OR organic golden sugar.. coconut sugar goes so well with the lemony flavors!)
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. sea salt
- 2 Tbsp. poppy seeds
- 1 cup lemon yogurt (Greek, OR use vanilla yogurt mixed in with the juice of 1 lemon)
- 1 large egg (at room temp)
- 1 tsp. pure vanilla extract
- 1/3 cup melted butter (OR ghee; feel free to sub vegan butter!)
- 2 Tbsp. grated lemon zest
- 2 1/2 Tbsp. fresh lemon juice
- 1/3 cup fresh lemon juice
- 1/2 cup icing sugar (organic)
