Lemon Pie is a perfect palate pleaser. It is light, sweet, and decadent. Make this pie for a holiday, special occasion or a sweet treat on a Sunday evening. Pie crust ingredients include flour, sugar, butter, egg yolks, cold water, and salt. The pie filling ingredients include lemon juice, lemons, butter, sugar, eggs, and egg yolks. After baking the crust to perfection, letting it cool, and adding the filling, make sure it sits in the refrigerator for at least 2 hours. Top with strawberries for added sweetness.
Ingredients
- 250 grams flour
- 40 grams sugar
- 125 grams butter (cold and cubed)
- 1 egg yolk
- 60 mL cold water
- 1 pinch salt
- 150 mL lemon juice
- 3 lemons
- 170 grams butter (cubed)
- 220 grams sugar
- 5 eggs
- 1 egg yolk
Directions
- Preheat the oven to 180 Celsius.
- Mix the flour and sugar together in a large bowl and cut in the butter. Add the egg yolk and salt and mix together. Add the cold water, little by little, and form into a ball. Cover in plastic wrap and refrigerate.
- Roll the dough out until it is only 5 millimeters thick and press into a pie pan. Prick with a fork and refrigerate for 60 minutes or place into the freezer for 30 minutes.
