The hot pasta is tossed with a quickly made lemon butter sauce with beaten eggs, crushed red pepper and salt, turning it luxuriously creamy. The dish is garnished with parsley for color and brightness. Given the sauce is butter-based, it's best to make it right before serving to avoid separation.

  • 200 grams butter (at room temperature)
  • 2 egg yolks
  • 1 lemon (strictly organic)
  • 1 lemon
  • ground nutmeg
  • chili peppers (Ground)
  • grated Parmesan cheese

    Directions

    1. Cream the butter with a fork, add the egg yolks and the lemon peel and continue stirring.
    2. Add the lemon juice, the nutmeg, a pinch of chili pepper, and a pinch of salt.
    3. Cook the pasta to ‘al dente’ in a stockpot of salted boiling water, drain the pasta and return it to the pan, add the butter mixture and the parmesan and stir.
    4. Serve with some chopped parsley on top.
