- 4 oz. bittersweet chocolate (chopped, at least 60 percent cacao)

- 1 cup light corn syrup (or Lyle’s golden syrup, divided)
- 2 cups granulated sugar
- 1 1/2 tsp. lemon extract
- 1 pinch kosher salt
