- 3/4 cup sugar (pure cane or coconut* sugar)
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 cup almond milk (or other milk of choice)
- 1/3 cup olive oil (or other oil of choice)
- 2 lemons (medium, about ⅓ cup juice and 2 tablespoons zest)
- 1 tsp. vanilla extract
- buttercream (Lemon, recipe below)
- 1 cup gluten free flour (I used Bobs Red Mill Gluten-Free 1-to-1 Baking Flour, in the blue bag)
- 1/2 cup blanched almond flour (super fine)
- 3/4 cup sugar (pure cane or coconut* sugar)
- 2 baking powder (teapoons)
- 1/2 tsp. salt
- 1/2 cup almond milk (or other milk of choice)
- 1/3 cup olive oil (or other oil of choice)
- 2 lemons (medium, about ⅓ cup juice and 2 tablespoons zest)
- 1 tsp. vanilla extract
- buttercream (Lemon, recipe below)
- 1 cup butter (or margarine, softened)
- 3 1/2 cups powdered sugar
- 2 Tbsp. lemon zest (to taste)
- 2 Tbsp. lemon juice
- 1 tsp. vanilla extract
