- 8 cups chicken broth (good quality)
- 3 carrots (peeled and cut into 1/4 inch rounds)
- 3 stalks celery (cut into 1/4 inch thick pieces)
- 1 tsp. thyme (dried or fresh)
- 2 bay leaves
- 1/4 tsp. ground ginger
- 2 green onion (stalked, thinly sliced)
- 2 egg yolks (lightly beaten)
- 1/4 cup lemon juice (freshly squeezed)
- 1 large lemon
- 8 oz. mushrooms (sliced)
- 3 1/2 cups wild rice blend (cooked, I use Lundberg Wild Rice Blend)
- 3 cups chicken (cooked shredded, rotisserie works well)
- 2 cups baby kale (or spinach leaves)
- kosher salt
- freshly ground black pepper
- fresh Parmesan cheese (Optional:, for serving)
