This turned out well. I made a few modifications. I had boneless skinless chicken thighs so I used those. I don't do heavy cream, so I used skim milk with a little corn starch to thicken it up. I had 50/50 spinach and spring mix and used that instead of just spinach. Came out well. We served it over rice with steamed broccoli. The kid loved it. Will definitely make this again. make it again.
