- 1 lemon (small, or half of regular-sized lemon)
- 1 cup frozen blueberries (or fresh, I used frozen, I think it helps them not sink!)
- 1 egg
- 1 cup milk
- 1/4 cup canola oil
- 1/4 cup all purpose flour
- 2 Tbsp. sugar
- 1/2 tsp. ginger
- 2 Tbsp. butter (room-temperature)
