Pretty tasty. The lemon is great. I think it could use another spice along with the ginger to add a touch more flavor. I also subbed frozen mixed vegetables since I didn’t have just peas on hand and it worked fine.

The lemon in the rice gave it a really fresh flavour. I couldn’t really taste the ginger & might add a bit more next time. Unfortunately, I soaked the rice prior to finding this recipe which made it a little mushy. Next time I wouldn’t soak it.
