- 1/3 cup extra virgin olive oil (good-tasting)
- 3 Tbsp. honey
- 1/2 cup fresh lemon juice (fresh or as needed)
- 1 onion (medium, coarsely chopped)
- 1/2 tsp. ground black pepper (freshly ground)
- 6 lb. leg of lamb (boned, trimmed of most surface fat)
- 3 hearts of romaine (leaves seperated)
- 1/3 cup salt (coarse)
- 1/3 cup ground cumin (ground freshly ground if possible)
- 1/3 cup aleppo pepper (or other hot ground chile)
- 1/2 cup honey
- 2 lemons (each cut into 6 wedges)
- 1 bunch mint (fresh)
- 1 bunch watercress
- 1 bunch fresh cilantro (fresh)
- 1/2 cup dry red wine
