- 6 cups beef brisket (leftover smoked, cubed into 1/2"x 1/2" pieces, slightly larger is ok too)
- 2 large onion (chopped)
- 6 slices bacon (thick, chopped into 1/4 x 1/4 in pieces)
- 8 cloves garlic (minced)
- 2 red bell pepper (large, chopped, substitute Italian sweet peppers as well!)
- 2 btl. beer ("real", sorry no lite beers or low carb!)
- 1 cup coffee (hot or cold doesn't matter! - no instant!)
- 15 oz. diced tomatoes
- 15 oz. tomato sauce
- 8 oz. green chili (diced, can substitute some diced jalapenos here as well!)
- 7 oz. corn kernels (drained)
- 7 oz. black beans (rinsed and drained)
- 7 oz. red kidney beans (rinsed and drained)
- 2 tsp. smoked paprika
- 2 Tbsp. ground cumin
- 4 Tbsp. red chili powder
- 2 Tbsp. seasoning (dried Chipolte)
- 2 tsp. olive oil
- sour cream
- shredded sharp cheddar cheese
- fresh cilantro
