- 1/4 cup unsalted butter
- 5 Tbsp. gluten free flour
- 10 oz. chicken sausage (sliced, I use pre-cooked, smoky Aidells Cajun andouille sausage but uncooked works just as well.)
- 1 white onion (chopped, 1 medium onion)
- 1 cup diced celery (about 2 stalks)
- 1 cup red bell pepper (or diced green, 1 bell pepper)
- 3 cups smoked turkey (leftover, or dark meat roast turkey, diced)
- 2 Tbsp. Creole seasoning (I use Tony Chachere’s – adjust to your liking)
- 1 tsp. cayenne pepper
- 1 1/2 tsp. smoked paprika
- 1/4 tsp. kosher salt
- 4 cups chicken broth
- 2 gluten
- 1 Tbsp. Tabasco Sauce (or cajun hot sauce of choice – optional)
- salt

- 2 cauliflower rice (+ cups cooked)
- chopped fresh parsley (Optional topping –)
