- 150 grams chestnut mushrooms (sliced)
- 150 grams pancetta (cubes)
- 1 onion (peeled and chopped finely)

- 300 grams arborio rice (1 ⅓rd cups uncooked)

- 1,200 mL chicken stock (homemade is best, but water with 3-4 stock cubes works well too.)
- 250 grams leftover turkey (cooked, shredded)
- 1/4 tsp. salt
- 1/4 tsp. ground black pepper
- 50 grams Parmesan (grated)
- 1/2 lemon
