- 1 cup dry quinoa (I use Ancient Harvest Brand, if you're using a different brand then cook according to package directions)
- 2 cups water
- 2 cups turkey (cooked leftover)
- 5 oz. spinach (package of, and Arugula greens)
- 1/2 cup smoked gouda cheese (chopped Apple)
- 1 honey (Crisp Apple cored and chopped into bite size pieces)
- 2 celery stalks (chopped into bite size pieces)
- 1/4 cup dried cranberries
- 1/2 cup fresh cranberries (rinsed)
- 1 shallot
- 2 sage leaves
- 1/2 cup extra-virgin olive oil
- 2 Tbsp. red wine vinegar
- 1 Tbsp. lime juice (1 Lime)
- 1 Tbsp. honey
- 1/4 tsp. sea salt (ground)
- 1/4 tsp. ground black pepper
