- 3 Tbsp. runny honey

- 1 tsp. coriander seeds (crushed in pestle and mortar)

- 400 grams coconut milk
- 1 cup chicken stock
- 2 tsp. cornflour (constarch diluted in 1 tbsp cold water)
- 1 lb. roast turkey (leftover, or chicken cubed)
- 2 handfuls baby spinach (stalks removed)
- chilli flakes (pinch crushed)

- freshly ground pepper
- fresh parsley (or coriander to garnish, optional)
