- 1 Tbsp. lemon zest
- 1/4 cup lemon juice (fresh-squeezed)
- 1 lemon (large, or 2 smaller ones to get this much juice.)
- 2 Tbsp. spicy brown mustard (or use any mustard that doesn't have added sugar)
- 1/2 cup extra virgin olive oil
- ground black pepper (fresh-, to taste)
- 4 cups cooked chicken (diced, about 1 lb. cooked chicken or 4 small breasts)
- 1 jar hearts of palm (I used Trader Joe's Hearts of Palm which came in a 14.5 oz. jar.)
- 1 can black olives (6 oz. drained extra large)
- 1/2 cup sliced green onions (white and green parts)
- ground black pepper
- salt
