Description
I wanted a soup recipe which used leeks but not potatoes and as there appeared to be none available I invented my own. Is now one of my favourite as the flavour can be altered by just adjusting the amount of each ingredient. Don't be put off by the colour, which could be a deep green if you use the green end of the leek and a green pepper - or a paler green if you used the white end of the leek and half and half peppers.

- leek (Chopped)
- yellow pepper (or Green, chopped, or half and half)
- chopped onion (Small)
- clove (garlic, or two - crushed)
- 1 liter vegetable stock
- salt

Directions
- You can do this one of two ways. Boil it all up until vegetables are tender then serve as it is or put it through the blender for a smooth soup.
- Or if you have a soup maker - chuck in all ingredients and press go. Ensure that the capacity of the soup maker is not exceeded. You can always add more stock at the end if it is too thick or you want to stretch it out to more servings.
