Description
Aesthetically pleasing bean salad that can easily be made in large quantity for a BBQ or potluck. Dressing tuned for spiciness.
Ingredients

- 1 red bell pepper (chopped)
- 15 oz. black beans (rinsed, drained)
- 15 oz. kidney beans (rinsed,drained)
- 1 green bell pepper (chopped)
- 15 oz. corn kernels (rinsed, drained)
- 1 red onion (chopped)
- 1/2 cup olive oil
- 1/2 cup red wine vinegar
- 2 Tbsp. lime juice
- 1 Tbsp. lemon juice
- 2 Tbsp. white sugar
- 1 Tbsp. salt
- 2 cloves garlic (mashed)
- 1/2 cup cilantro (chopped)
- 1/2 Tbsp. ground cumin
- 1/2 Tbsp. ground black pepper
- 1/2 tsp. chili powder

Directions
- Combine beans, bell peppers, corn and red onion in a bowl.
- Whisk together olive oil, red wine vinegar, lemon/lime juice, sugar, salt, garlic, cilantro, cumin, black pepper. Season with chili powder.
- Pour dressing over vegetables, and toss well.
- Chill before serving.
