- 15 oz. enchilada sauce (Mild Green Chile, If you need gluten-free be sure to choose a brand of green chile sauce that doesn't contain wheat. One is La Victoria.)
- 2 cans pinto beans (15. oz)
- 1 onion (large, diced in 1/2 inch pieces)
- 1 green bell pepper (large, diced in 1/2 inch pieces)
- 2 tsp. olive oil
- 1 Tbsp. ground cumin
- 4 oz. green chile (diced, plus juice, not jalapenos unless you want it really hot)
- 3 Tbsp. Tabasco Green Pepper Sauce (Optional, but nice if you want it a bit hotter; we used two tablespoons.)
- 3/4 cup light sour cream
- 4 cups cooked chicken (diced)
- 1/2 cup green onions (thinly sliced)
- 2 cups low fat mozzarella (grated)
