  • 15 ounces enchilada sauce (Mild Green Chile, If you need gluten-free be sure to choose a brand of green chile sauce that doesn't contain wheat. One is La Victoria.)
  • 2 cans pinto beans (15. oz)
  • 1 onion (large, diced in 1/2 inch pieces)
  • 1 green bell pepper (large, diced in 1/2 inch pieces)
  • 2 teaspoons olive oil
  • 1 tablespoon ground cumin
  • 4 ounces green chile (diced, plus juice, not jalapenos unless you want it really hot)
  • 3 tablespoons Tabasco Green Pepper Sauce (Optional, but nice if you want it a bit hotter; we used two tablespoons.)
  • 3/4 cup light sour cream
  • 4 cups cooked chicken (diced)
  • 1/2 cup green onions (thinly sliced)
  • 2 cups low fat mozzarella (grated)
