- 1/2 tsp. grated lemon zest (freshly)
- 1 tsp. serrano pepper (seeded and minced fresh)

- 15 oz. black beans (drained and rinsed)
- 1 cup zucchini (diced, about 4 ounces)
- 1 1/2 cups cherry tomatoes (halved or quartered red and yellow, depending on size)
- 1 avocado (medium-large ripe-but-firm, cut into 1/2-inch dice, about 1 cup)
- 1 1/4 cups corn kernels (fresh raw, from about 2 large ears)
- kosher salt
- 1/3 cup chopped fresh herbs (coarsely, any combination of basil, mint, cilantro, parsely, chives, Thai basil, etc.)
- 1/3 cup scallions (sliced, light and dark green parts)
- 1/3 cup toasted sliced almonds (toasted pepitas, or toasted pine nuts)
- 6 herb (fresh, sprigs or edible flowers, optional)
