- 6 egg yolks (100 g)
- 1/2 cup granulated sugar (112 g, for vanilla custard base)
- 1 1/2 cups whole milk (354 mL)
- 2 Tbsp. lavender buds (for vanilla custard base)
- 2 tsp. vanilla extract (for vanilla custard base)
- 1 1/2 cups heavy cream (360 mL, for vanilla custard base)

Directions
- SPECIAL EQUIPMENT: KitchenAid® Stand Mixer with whisk attachment; KitchenAid® Ice Cream Bowl Attachment with dasher and drive; fine mesh sieve; airtight container for freezing
- Place the KitchenAid® Ice Cream Bowl in the freezer for 24-hours.
- Make the honey caramel. Place the honey, brown sugar, and butter in a saucepan set on the stove on medium-high heat. Whisk constantly and bring the mixture to a light boil. Then, remove from heat and whisk in the heavy cream, vanilla extract, and salt. Pour the mixture into a bowl, cover with plastic wrap, and chill completely.
