- 1/4 tsp. Sichuan peppercorns (whole)
- 1 whole long pepper (see note)
- 1/4 tsp. whole cloves
- 1 star anise pod
- 1 piece mace
- 1/4 tsp. ground nutmeg
- 1 piece mace
- 1/2 cinnamon stick
- 4 pods black cardamom
- 1 pod green cardamom
- 1/4 tsp. whole black peppercorns
- 2 Tbsp. vegetable oil
- 6 cloves garlic (skins on, smashed in a mortar and pestle or under a heavy skillet)
- 1/2 lb. pork loin (lean, or shoulder, chopped by hand into pieces no larger than 1/4-inch, see note)
- 1/4 lb. pork offal (mixed, such as kidney, liver, or tripe, chopped by hand into pieces no larger than 1/4-inch, see note)
- 1/4 cup cilantro leaves (chopped fresh, and fine stems)
- 1/4 cup pork blood (fresh, see note)
