- 2 cups basmati rice (organic, Trader Joe’s brand)
- 24 oz. langoustine (frozen, thawed and drained, Trader Joe’s brand)
- 1 jar curry (Trader Joe’s brand, Simmer Sauce)
- 1 cup frozen peas
- 4 cloves garlic (fresh, peeled and chopped)
- 1 onion (large, finely chopped)
- 2 tsp. kosher salt
- 1 tsp. crushed black pepper
- 1 tsp. ground cumin
- 2 tsp. curry powder (ground)
- 1/2 tsp. ground turmeric
- 1 jar curry (Simmering Sauce, Trader Joe’s)
- 1/2 tsp. ground cinnamon
- 1/2 cup coconut water
- 3 Tbsp. seed (grape, or sunflower oil)
- 1/4 bunch fresh flat leaf parsley (finely chopped, for garnish, optional)
