Lamb Stir Fry with Rice Noodles

  • 1 tablespoon peanut oil
  • 1 pound lamb (sliced into strips)
  • 1 onion (thinly sliced)
  • 1 head broccoli (cut into florets, stem thinly sliced)
  • 1 inch ginger (peeled, shredded)
  • 2 tablespoons sweet soy sauce
  • 2 tablespoons hot chili sauce
  • 1 pound rice noodles (fresh flat, cooked, drained)
  • red chili (sliced, to serve)

    Directions

    1. Heat oil in large wok on high. Stir fry lamb 2-3 minutes, to brown well. Remove from wok.
    2. Stir-fry onion in same wok 1-2 minutes. Add broccoli and ginger and stir-fry 2 minutes. Return lamb to wok with sauces. Simmer 2 minutes.
    3. Gently arrange noodles in rows on serving platter. Spoon over lamb mixture and top with sliced chili.
