- 2 brown onions (large, thinly sliced)
- 2 Tbsp. ghee
- 800 grams lamb shoulder (boneless, cut into 4cm pieces)
- 1 cinnamon stick
- 6 green cardamom pods (bruised)
- 4 cloves
- 1 tsp. black mustard seeds
- 20 curry leaves
- 3 garlic cloves (crushed)
- 1 Tbsp. grated ginger (finely)
- 400 grams crushed tomatoes (cans)
- 2 tsp. salt
- 1 kg lamb bones
- 250 grams yoghurt (plain)
- 1/4 tsp. salt
- 1/2 tsp. cumin seeds (roasted, ground)
- 1/2 tsp. jaggery (grated)
- 2 medium tomatoes (seeded, cut into 5mm dice)
- 1 brown onion (small, cut into 5mm dice)
- 1 cucumber (Lebanese, seeded, cut into 5mm dice)
- 1 Tbsp. chopped coriander (finely)
- 1 green chilli (small, finely chopped)
