- 1 bunch scallions (minced, white and light green parts only)
- 1 clove garlic (minced)
- 1 tsp. ground coriander
- 1/2 tsp. ground cumin
- 1/4 tsp. ground cinnamon
- 1 tsp. fine sea salt
- 3 black pepper (grinds)
- 1 lb. ground lamb
- 1 cup milk (plain sheep's, goat's milk or cow's milk yogurt)
- 1 garlic scape (or clove of garlic, diced)
- 1/2 cup fresh mint (finely chopped)
- 2 tsp. fresh lemon juice
- 1/2 tsp. fine sea salt
- 2 tsp. extra virgin olive oil
- 1 head bibb lettuce (radicchio, or endive separated into individual leaves, washed and patty dry)
- 1 cucumber (peeled and roughly chopped)
- 1/2 cup currants (soaked in warm water for 5 minutes to soften)
- fresh mint leaves (Minced, for garnish, optional)
