  • 12 lamb chops (trimmed)
  • 2 tablespoons vegetable oil
  • 2 tablespoons fish sauce
  • 1/4 cup lime juice
  • 1 red chili (fresh long, deseeded, finely chopped)
  • 1/2 red cabbage (core removed, shredded)
  • 1/2 cup cilantro leaves (fresh)
  • 1/4 cup fresh mint leaves (torn)

    Directions

    1. Preheat broiler. Brush lamb with 1 tbsp oil and cook for 3 mins per side for medium, or until cooked to your liking. Set aside.
    2. Meanwhile, whisk together remaining oil, fish sauce, lime juice and chili. Add cabbage, cilantro and mint and toss to combine. Serve with lamb.
