- 500 grams lamb mince (better to use less lean if possible otherwise it is too dry)
- 1 onion (small, finely chopped)
- 2 cloves garlic (crushed)
- 1 Tbsp. olive oil (plus extra to fry the burgers in)
- 1 Tbsp. chopped parsley (finely, pref Italian flat leaf)
- 1 Tbsp. chopped fresh mint (finely)
- fresh oregano (or 1 Tbs of dried)
- 1 tsp. ground cumin
- 1/2 tsp. ground coriander
- 1/2 cup breadcrumbs
- 1 large free range egg
- 1/4 cup tomato sauce (this adds juiciness and a touch of sweetness)
- 1 tsp. chilli flakes (dried, – optional and if you wanted to add a bit of heat)
- ground black pepper
