- 300 grams prawns (medium, shelled and deveined)
- 1 onion (small, finely chopped)
- 300 grams frozen mixed vegetables (thawed)

- 600 grams long-grain white rice (pre-cooked, cold from the fridge)

- chillies (Sliced fresh)
- 3 shallots (small)
- 2 cloves garlic

- 2 Tbsp. dried shrimp (soaked)
- 2 lemongrass (fresh, . white part only, finely chopped)
- 2 Tbsp. galangal (chopped fresh)
- 1 tsp. shrimp paste
- 3 chillies (fresh, seeds removed and sliced)
- 1 tsp. tumeric (chopped fresh)
- 2 tsp. ground coriander
- 3 lime leaves
- 1 tsp. lime zest
