- 2 1/4 cups plain flour
- 1/3 cup caster sugar
- 175 grams unsalted butter (chilled and chopped)
- 2 egg yolks
- 2 Tbsp. chilled water
- 10 eggs
- 200 grams caster sugar
- 1 cup lemon juice (Freshly Squeezed, strained)
- 300 mL cream (Pouring)

Directions
- Process flour, sugar and butter in a food processor until mixture resembles fine breadcrumbs. Add egg yolks and chilled water. Process until dough just comes together. Turn the dough out onto a lightly floured surface and knead
- gently until smooth. Roll out with rolling pin and place into a greased tart tin.
- Preheat the oven to 200oC. Once the pastry has been pressed into the tin and edges trimmed, place in the freezer for 20 minutes to firm. Then blind Bake in the oven for 20 minutes or until golden. Leave aside to cool.
