- 3/4 tsp. potato flour (or 1 1/8 teaspoons cornstarch)
- 1 tsp. dark soy sauce
- 1 tsp. light soy sauce
- 1 Tbsp. chinese black vinegar (or Chinkiang)
- 1 tsp. toasted sesame oil
- 1 Tbsp. homemade chicken stock (or canned chicken broth, or water)
- 3 garlic cloves (thinly sliced)
- ginger (enough to equal the amount of garlic, thinly sliced)
- 5 scallions (white parts only, cut into 1/2-inch lengths)
- 2 Tbsp. peanut oil
- red chili peppers (A generous handful of dried, at least 10 preferably Sichuanese)
- 1 tsp. Szechwan peppercorns (whole)
- 2/3 cup unsalted roasted peanuts (roasted)
