- 1/2 onion (medium, diced)

- 2 scallions (thinly sliced, divided)
- 1/2 green bell pepper (diced)
- 1 red chili pepper (Korean long hot, sliced thinly)

- toasted sesame seeds (for garnish, optional)
- 2 Tbsp. vegetable oil
- 2 Tbsp. gochugaru (고추가루, Korean red chili pepper flakes)
- 2 Tbsp. soy sauce (plus more if needed at the end)
- 1 Tbsp. gochujang (고추장, Korean red chili pepper paste)
- 1 Tbsp. doenjang (된장, Korean fermented soybean paste)
- 2 tsp. sugar
- 1 1/2 cups water (or more if needed)
- 1/2 Tbsp. cornstarch (mixed with 1 tablespoon water)
