- 1,400 grams pot roast (cross rib roast or blade roast)
- kosher salt

- 3 Tbsp. oil (- canola, grapeseed or other flavourless oil)
- 5 cloves garlic (chopped)
- 2 inches ginger (piece of, peeled and rasped)
- 3 onions (sliced)
- 1 cup mushroom broth (I use Campbell's mushroom broth)
- 1/3 cup dried mushrooms (or 5 or 6 Chinese dried mushroom caps)
- 1 asian pear (peeled and shredded or finely chopped)
- 2 Tbsp. soy sauce
- 1 Tbsp. fish sauce
- 1 Tbsp. sesame oil
- 1 Tbsp. mirin
- 2 Tbsp. bean paste (Korean, Doenjang)
- 2 Tbsp. hot pepper paste (Korean fermented, Gochujang)
- 2 Tbsp. Korean chili powder (Gochugaru, optional)
- beef (shredded)
- au jus
- 2 crusty buns (french sticks or six)
- Ssamjang (korean dipping sauce or paste)
- 3 cups cheddar (shredded shard, you can use more or less, to your taste)
- 3/4 cup kimchi (chopped if needed)
- 2 scallions (sliced thinly)
- 6 Tbsp. sesame seeds
- Kewpie Mayonnaise (or other brand mayonnaise)
- 1 handful fresh cilantro (leaves picked off)
