Description
If you’re craving the bold, savory flavors of traditional Korean bulgogi but are short on time, this recipe has your name on it. By using ground beef instead of the more traditional rib-eye and sirloin, and serving it over microwavable rice, you can have this umami-rich, nutty, and mildly sweet dish on the table in only 20 minutes. The recipe is a Yummly original created by Diana Kuan.

- 4 scallions
- 1 piece fresh ginger (small, enough to make 1/2 tsp. grated)
- 3 cloves garlic
- 1/4 cup reduced-sodium soy sauce
- 1 Tbsp. toasted sesame oil
- 1 Tbsp. packed light brown sugar
- 1/2 tsp. crushed red pepper flakes (plus more for serving; go with 1/4 tsp. for less heat)
- 1/4 tsp. black pepper (go with 1/8 tsp. for less heat)
- 1 Tbsp. canola oil (or other high-heat cooking oil)
- 1 lb. ground beef (80 percent or 85 percent lean)
- rice (Microwavable, white or brown rice for serving, heated according to package instructions)
- 2 tsp. sesame seeds (preferably toasted)

Directions
- Slice scallions into 1/4-inch thick pieces. Peel ginger and grate until you have about 1/2 tsp. Finely chop garlic and set ingredients aside.
- In a small bowl, mix together soy sauce, sesame oil, brown sugar, 1/2 tsp. red pepper flakes, and the black pepper.
- Heat a large frying pan over medium-high heat. Add oil and tilt pan to coat the bottom. Add garlic and ginger and cook, stirring, just until aromatic, about 30 seconds.
- Add beef. Cook, stirring often and breaking up beef into crumbles, until beef is no longer pink, 4-5 minutes. Carefully tilt pan and spoon out excess fat. Stir in the soy sauce mixture and continue cooking until it’s heated through, another 30-60 seconds.
- Divide rice among serving bowls and spoon beef on top. Top with sesame seeds and scallions, and serve with more red pepper flakes to add to taste.
