- 3 cups soy sauce (reduced-sodium, do not use regular soy sauce)
- 3 cups light brown sugar (packed)
- 1 1/4 cups water
- 1 cup Soju (or sake)
- 1/2 cup gochujang (store-bought or homemade, Korean chile paste)
- 1/2 cup honey (mild)
- 1/3 cup rice wine vinegar
- 1/4 cup minced garlic
- 1/4 cup fresh ginger root (grated)
- 4 scallions (ends trimmed, thinly sliced)
- 1 pear (ripe, any variety, peeled, cored, and grated on the finest side of a box grater, about 200 grams)
- 1 tsp. black pepper
- 1 tsp. chili pepper (Korean, powder or crushed red pepper flakes)
- 3 tsp. starch (Clear Jel, ThermFlo, or other canning, see above)
