- 4 Tbsp. soy sauce

- 2 1/2 Tbsp. toasted sesame oil
- 2 tsp. ginger (grated)
- 8 black pepper (grinds)
- 1 pinch sea salt (or kosher salt)
- 3 cloves garlic (grated)
- 2 pears (semi-hard sweet, such as Barlett, or 1 Asian pear, peeled and grated on a box grater)
- white rice (Cooked medium-grain, for serving)
- lettuce leaves (Green leaf, for serving)
- sauce (Ssam Jang, recipe follows)
- sesame (leaves, perilla, for serving, optional)
- 4 1/2 Tbsp. soy bean paste (Korean fermented, doenjang)
- 3 Tbsp. toasted sesame seeds
- 2 Tbsp. korean chile paste (gochujang)
- 2 Tbsp. mirin
- 1 1/2 tsp. toasted sesame oil
- 1 clove garlic (grated)
- 1 spring onion (or scallion, finely chopped)
