A staple in my kitchen! Being vegan, I use it instead of bonito based broth for miso soup AND I use it to make vegan versions of seafood dishes like cioppino, clam chowder, seafood gumbo, etc. It imparts a wonderful and authentic seafood-like flavor to any dish that requires such a flavor. Cooking your dried beans with kombu will also help to make them easy to digest!
