  • 4 potatoes (peeled and cubed into bite sized pieces)
  • 14.5 ounces diced tomatoes
  • 1 cup bacon (fried very crisp and chopped very finely, I used that already bagged kind and it works best)
  • 16 ounces mushrooms (sauteed in a little butter or olive oil then chopped finely)
  • 1 cup kale (cleaned and chopped with that woody stem cut off.)

    Very tasty indeed, also very easy to prepare and even easier to overeat it too. I didn’t have kale, so substituted the fresh chard we had instead, and it was downright delightful. Used mild Italian sausage, and might try spicy next time. Overall, this is a very tasty and hearty soup. Reminded me a bit of Ilive Garden’s Zuppa Toscana. A big bowl of this soup is perfect for the wintery cold days we’re having, and I plan to add this to our seasonal soup rotation.

    Ahhhmazing I added parsley & paprika , put salt and pepper on the potato before putting into crock pot and made it super flavorful

    This soup is a hit with my family. I have made it in the crockpot and on the stove top. I use corn starch instead of flour to make it gluten free. It's delicious and so easy!
