- 2 napa cabbage (korean, 배추 baechoo)
- 1 radishes (korean, large, 무우 moo)
- 4 cups sea salt (with bittern removed)
- 20 cups water (for brine)
- 1 1/2 cups chili powder (korean, adjust to taste – even up to 2 C)
- 1/2 cup chopped garlic
- 1 Tbsp. ginger (chopped)
- 8 green onions (sliced thin 1 1/2 in lon)
- 7 oz. parsley (or water dropwort - 미나리 minari, cut 1 1/2 in long)
- 1 bunch mustard greens (korean, 갓 Gaat)
- 1/2 cup sauce (fermented seafood, one or more of the following: fermented anchovies, (멸치젓 myulchijeot), fermented shrimps (새우젓 saewoojeot), fermented yellow croaker (조기젓 jokijeot), fermented sand lance (까나리젓 kkanarijeot))
- 1/3 cup shrimp (fresh chopped, or fresh oyster, optional)
- pears (korean or asian)
- persimmon (the hard kind, optional)
