- 10 lb. pork shoulder
- 1 cup Gochujang base
- 2 oz. paprika
- 2 Tbsp. chili powder
- 1 Tbsp. granulated garlic
- 2 tsp. cumin
- 2 Tbsp. coriander
- 1/2 tsp. allspice
- 3 Tbsp. salt
- 1 Tbsp. sugar
- 1/2 cup Gochujang base
- 2 qt. kimchi (chopped)
- 20 bao buns
- watercress (To garnish, optional)

Directions
- 1. Mix together paprika, chili powder, garlic, cumin, coriander, allspice, salt, sugar and hot pepper paste to make dry rub.
- 2. Rub pork shoulder with dry rub, then rub with gochujang.
- 3. Roast in oven at 300°F for about 4½ hours, until tender.
