- 1/4 cup brine
- 1/4 cup kimchi
- 1/2 lb. pork shoulder (chopped into small pieces ~ 1/2 in.)
- 1/2 inch tofu (package of, sliced ~ 1/3in thick)
- 1 tsp. salt
- 2 tsp. sugar
- 2 tsp. gochugaru (Korean hot pepper flakes)
- 1 Tbsp. hot pepper paste (gochujang)
- 1 tsp. sesame oil
- 2 stock (+ cups of anchovy, all of the stock from below)
- 8 anchovies (large dried, heads and guts removed)
- 1/2 cup radish (Korean, sliced thinly, or daikon radish)
- 5 inches dried kelp (approx dim. 5x5 inches)
- 4 roots (green onion)
- 4 cups water
