Description
Kidney bean stew provides the perfect base over which to serve tender shredded quail in this recipe for Kidney Beans with Quail. Cooked in a red wine and bay leaf sauce along with carrots and onions, the kidney beans are added to a garlic tomato sauce along with bell peppers for a rich, savory stew. Shred the quail meat and serve over individually portioned bowls of the kidney bean stew. You can substitute another variety of shredded meat in this recipe.

- 200 grams kidney beans (soaked in water overnight)
- 2 onions
- 1 carrot
- 1 cup red wine
- 2 bay leaves
- salt (to taste)
- 1 bunch garlic scapes (minced)
- 1/2 red bell pepper (diced)
- olive oil
- 250 grams tomato sauce
- 4 quail (roasted)

Directions
- Place the kidney beans in a saucepan with one onion, the carrot, the red wine, and bay leaves. Cover with water and cook until tender. Salt to taste and set aside.
- Dice the other onion and saute with the garlic scapes and bell pepper in the oil. When the onions are transparent and softened, drain off any excess oil.
- Add the tomato sauce, mix well, and salt to taste.
- Drain the beans, then add the tomato mixture along with some broth until of the desired consistency.
- Shred the quail meat and serve over bowls of the beans.
