- 16 oz. button mushrooms
- 1 1/2 Tbsp. mustard seeds (dark)
- 1 1/2 Tbsp. cumin seeds
- 3 Tbsp. vegetable oil
- 4 onions (small or 3 medium, chopped)
- 8 garlic cloves (minced)
- 1/4 tsp. ground cloves
- 1/4 tsp. ground cardamom
- 1 tsp. canela (Ceylon, true)
- 1/2 tsp. ground turmeric
- 1 tsp. paprika (or cayenne if you can take the heat)
- 1 1/2 tsp. ground cumin
- 1 Tbsp. ground coriander
- leaves (pinch dried fenugreek, methi, optional)
- 1 Tbsp. tomato paste (double strength, or 2 T regular)
- 8 oz. crimini mushrooms (sliced)
- 1 lb. ground beef
- 2 tsp. coarse sea salt (to taste)
- mushroom (ground, mixture, see instructions)
- 4 medium tomatoes (small or 3, peeled and chopped)
- 1 bunch kale (stems removed and finely sliced)
- 1 bunch chopped cilantro (divided)
- 1/3 cup whole milk Greek yogurt
- 2 tsp. Garam Masala
- 2 Tbsp. honey (to taste)
- 1/2 lemon (juice of)
- 10 oz. frozen peas (or equivalent fresh, in which case add them with the tomatoes)
